

Roasted Carrots with Cilantro Chimichurri and Crunchy Chickpeas
Sometimes the most healing meals are the ones rooted in simplicity. This colorful, nutrient-dense dish brings together three elements that not only please the senses but also nurture the body—especially when it comes to thyroid health. With vibrant roasted carrots, protein-rich crispy chickpeas, and a refreshing cilantro chimichurri, this recipe is a celebration of plant-based nourishment and balance.

Ingredients
Roasted Carrots:
- 2 pounds of baby carrots
- 2 tablespoons of olive oil
- ½ teaspoon of cumin
- ¼ teaspoon of cayenne pepper
- Salt to taste
Crispy Chickpeas:
- 1 can of chickpeas, rinsed and dried
- 1 teaspoon of turmeric
- ½ teaspoon of sweet paprika
- 1 tablespoon of olive oil
- Salt to taste
Cilantro Chimichurri:
- ½ cup of fresh cilantro, chopped
- ¼ cup of parsley, chopped
- 2 garlic cloves, minced
- Juice of 1 lemon
- ¼ cup of olive oil
- Salt and pepper to taste
Instructions
- Roasted Carrots:
Preheat oven to 400°F (200°C). Toss carrots with olive oil, cumin, cayenne, and salt. Spread on a baking sheet and roast for 20–25 minutes, until tender and caramelized. - Prepare the Crispy Chickpeas:
Toss chickpeas with olive oil, turmeric, paprika, and salt. Spread on a separate baking sheet or add to the same one if there’s space. Roast for 20–25 minutes, shaking the pan halfway through. - Make the Cilantro Chimichurri:
Mix cilantro, parsley, garlic, lemon juice, and olive oil in a bowl. Season with salt and pepper. - Assemble the Dish:
Place roasted carrots on a serving platter. Sprinkle crispy chickpeas on top and drizzle generously with chimichurri.
